Frozen strawberry & vanilla vodka martini

Preparation Time

Ingredients (serves 10)
  • 2 x 250g punnets strawberries, washed, hulled, halved
  • 2 tbs icing sugar mixture
  • 4 cups crushed ice
  • 250ml (1 cup) chilled vanilla vodka
  • 60ml (1/4 cup) chilled dry vermouth

Method

  • Place the strawberries and icing sugar in the bowl of a food processor and process until smooth.
  • Add the ice, vodka and vermouth, and process until the ice is finely crushed.

Yule mule cocktails


Makes

Ingredients
  • 9 limes
  • 750ml vodka
  • crushed ice
  • 3 x 750ml bottles ginger beer, chilled

Method

  • Juice 6 limes. Cut remaining 3 limes into small wedges. Pour vodka and 1 cup lime juice into a carafe or jug. Stir to combine.
  • Half-fill twelve 300ml-capacity highball glasses with crushed ice. Pour over 1/3 cup vodka mixture. Top with ginger beer and lime wedges. Serve.

Berry merry

Berries add festive cheer to this delicious drink.

Ingredients (serves 8)

  • 1/4 cup (55g) caster sugar
  • 50ml boiling water
  • 250g boysenberries or blackberries
  • 1/2 cup (125ml) vanilla vodka
  • 1/4 cup (60ml) lime juice
  • 4 cups crushed ice
  • 1 (750ml) bottle chilled rose sparkling wine


Method


  • Combine sugar and water in a small bowl and stir until sugar dissolves. Set aside to cool.

  • Place sugar syrup, boysenberries, vodka and lime juice in the jug of a blender and blend until smooth. Strain through a fine sieve into a jug and discard seeds and pulp.

  • Place half the ice and half the berry mixture in the jug of a blender and blend until smooth. Spoon evenly among half the serving glasses and top with sparkling wine. Repeat with remaining ice, berry mixture and sparkling wine.

Cosmopolitan Champagne

Preparation Time


5 minutes

Cooking Time


10 minutes

Ingredients (serves 6)
  • 250ml (1 cup) cranberry juice
  • 2 tbs Cointreau liqueur
  • 2 tbs fresh lime juice
  • 6 sugar cubes
  • 1 x 750ml btl chilled pink Champagne or sparkling wine

Method

  • Place cranberry juice in a medium saucepan and bring to the boil over high heat. Cook, uncovered, for 10 minutes or until reduced by two-thirds. Remove from heat and set aside for 30 minutes to cool.
  • Combine the cranberry juice, Cointreau and lime juice in a small jug. Place a sugar cube in each serving glass. Pour the cranberry mixture over the sugar. Top with Champagne or sparkling wine and serve immediately.

Iced eggnog

Ingredients (serves 6)

  • 1/2 cup (110g) caster sugar
  • 2 cinnamon quills
  • 2 eggs
  • 3/4 cup (185ml) pure (thin) cream
  • 3/4 cup (185ml) milk
  • 100ml each brandy, rum & sherry
  • Ice cubes
  • Ground or freshly grated nutmeg, to dust


Method


  • Place sugar and cinnamon quills in a saucepan with 1/2 cup (125ml) cold water. Stir over low heat until sugar dissolves. Simmer for 1 minute, then remove and cool. Combine 100ml of the syrup in a blender with eggs, cream, milk and alcohol. Pour into cocktail glasses over ice and serve dusted with nutmeg.

Gin & watermelon frappe

This cocktail is a breeze to make, and, with its fresh fruity fragrance and hint of mint, it's just right for a warm evening.

Preparation Time

Equipment


You'll need 1.5L (6 cups) of watermelon juice. You'll need to soak 12 bamboo skewers in cold water for 20 minutes.

Ingredients

  • 1/2 medium seedless watermelon, rind removed, cut into 1cm pieces
  • 6 cups ice cubes, coarsely crushed
  • 310ml (about 1 1/4 cups) gin
  • Fresh mint leaves, to serve


Method


  • Thread 3 watermelon pieces onto a small bamboo skewer. Repeat to make 12 skewers. Place the remaining watermelon in the bowl of a food processor and process until smooth.

  • Strain the watermelon puree through a fine sieve into a large jug. Cover and place in the fridge for 1 hour to chill.

  • Place the watermelon juice, ice and gin in the bowl a food processor and process until smooth. Pour among serving glasses. Top with mint and decorate with skewers to serve.

Double-berry fizz

Add a touch of class and royalty to your celebrations with this berry cocktail.

Ingredients (serves 2)

  • 6 fresh raspberries
  • 6 fresh blueberries
  • Ice cubes
  • 30ml gin
  • 20ml Chambord Black Raspberry Liqueur
  • Sparkling wine, to serve


Method


  • Divide the raspberries and blueberries evenly between two 150ml-capacity serving glasses.

  • Shake the ice cubes, gin and Chambord in a cocktail shaker until combined. Strain the cocktail over the berries and top with wine.

Iced fruit slushies

Preparation Time

Ingredients (serves 12)

  • 375ml (1 1/2 cups) water
  • 315g (1 1/2 cups) caster sugar
  • 2 x 125g punnets blueberries
  • 2 x 125g punnets raspberries
  • 3/4 cup passionfruit pulp (about 6 passionfruit)
  • 12 cups ice cubes


Method


  • Place the water and sugar in a saucepan over low heat and stir until the sugar dissolves. Increase heat to medium-high and bring to the boil. Cook for 10 minutes. Set aside to cool slightly.

  • Place one-third of the syrup in a saucepan over medium heat. Add the blueberries and bring to a simmer. Reduce heat to low and cook for 3 minutes or until the syrup changes colour. Strain the syrup into a jug. Repeat with half the remaining syrup and the raspberries, then repeat with the remaining syrup and the passionfruit pulp.

  • Transfer the fruit syrups to separate airtight bottles and place in the fridge to cool.

  • Place the ice cubes in the jug of a blender and blend until finely crushed. Divide the crushed ice among serving glasses and drizzle over your choice of fruit syrup to serve.

Pink iced summer

Ingredients (serves 4)

  • 3 cups chilled lemonade
  • 1 1/2 tablespoons grenadine syrup
  • 1/2 cup chilled orange juice
  • 1/2 cup chilled pineapple juice
  • crushed ice and fresh pineapple wedges, to serve


Method


  • Place lemonade, grenadine, orange juice and pineapple juice in a large jug. Stir to combine.

  • Place ice in glasses. Top with lemonade mixture. Serve with pineapple wedges.

Greek Orthodox Youth Fellowship of Kogarah (March 2012-December 2012)

(All ages above 18 are welcome)

Information: On the first Monday of every calendar month we worship in the Church during the Divine Liturgy which is celebrated in English and then move to the Parish Hall for refreshments and fellowship.

Every other Monday of the month, we gather in the Parish Hall where a presentation is given on a selected topic and then we have the opportunity to ask questions and engage in fruitful discussion. Afterwards, we have the opportunity to socialise over light refreshments and snacks.

We also organise social evenings and get togethers.
