Pasta is often considered synonymous with Italy and the Italians. While I do not hesitate giving credit where it is due, (the Italians have created an awe-inspiring cuisine, pleasing to many world palates) but after having lived in Greece, I must say the Italians have some competition. Like the Italians, the Greeks have made pasta for centuries. For the Greeks, pasta was a way to preserve surplus eggs and milk for use throughout the year. It was also a way to put to use the milk and eggs produced during religious fasting periods when these ingredients were avoided. For this reason, most Greek pasta recipes use milk, eggs or both, resulting in highly nutritional, filling noodles. Below is a recipe for the most traditional Greek pasta, hilopites. After a bit of practice, this flavorful pasta becomes a dish that will easily impress any dinner guest or family member. The noodles are especially wonderful alongside roast chicken in tomato sauce, sprinkled with a bit of cheese.

Instructions
Things You'll Need

* 3 1/2 cups all purpose flour
* 3 eggs, lightly beaten
* a pinch of salt
* 2 tablespoons whole milk plus enough to make a soft dough.

Sift the flour (sifting aerates the flour).
* 2

Set aside few spoonfulls of flour. With the remaining flour, form a small mound on a large counter or wooden cutting board. Make a small well in the center of the mound and inside pour the salt and the eggs, beaten with a couple tablespoons of milk.
* 3

Slowly stir the egg mixture with a fork, adding in the flour little by little until a relatively uniform dough forms. Knead the dough with your hands, gradually adding the reserved flour and milk (as needed) until the dough becomes tight but soft.
* 4

Knead the dough in your palms with strong movements for 10 minutes. When the dough is smooth and elastic, shape into a ball and lightly flour. Place in the middle of a deep plate and let rest for about 30 minutes.
* 5

Next, take a small amount of dough and roll into a thin sheet with a rolling pin or a pasta roller. Cover with a cloth and let sit for 10 minutes.
* 6

Afterwards, cut the sheets of dough into tiny squares. Place the pasta squares on top of a cloth sprinkled with flour and boil fresh or dry for 2-3 days in the shade.

αλλά απ΄ την άλλη ...γουστάρω τις φαγώσιμες χιλόπιτες

οπότε .....ας δοκιμάσουμε και εμεις οι θνητοί να τις φτιάξουμε

μόλισ παρατήρησα κάτι, που πήγα να το εκτυπώσω ...

η συγγραφέα είναι "Lauren Wadowsky"..... και αναρωτιέμαι - αν και δεν αμφιβάλλω προς το παρόν, αν είναι πράγματι "ελληνική" συνταγή - όταν δοκιμάσουμε την συνταγή.... τότε θα δούμε αν καν πλησιάζει αυτά που έφτιαχνε η γιαγια μου

sold in most greek supermarkets.

not as nice i guess or as healthy as the home made ones..

i think raher over rated..have eggs..and bloat your stomach..

after eating them i feel like a lead balloon has hit the stomach..same feeling as eating lots of rice.

the only one bloated is me.

Greece is a nice place,but the food is not what i am generally used to.

as a result,i have put on some weight..which is a good thing because i am much too thin..but feel bloated and out of sorts..!

i usually have different diet back home.
i start off the day with steamed fish and some soya sauce..here i start the day off with honey and yoghurt.

lunch i will have oysters,and some salomon..

here i went to a restaurant taverna i had pastistsio..makaronada..greek salad..ohtapodi..tzatziki..finished off by baklava and kadaifi and ice cream..!i didnt eat all i just picked..but still..

dinner back home i have some fruit..
here i had souvlakia..!

if anyone stays in this country for too long they will DIE from the unhealthy food..!

Ladies & men (who know they're way around a kitchen).

I am wanting to sharpen my greek cooking skills - and am wanting to know whether you can make a tiropita using puff pastry that you use to make desserts.

I know you can make it with phyllo - I'm just wanting to try something different and I don't want to make the pita from scratch because let's face it - nikokires don't have the time :tongue:


I am asking as a fail of google search results :)
