Bake only on Tuesday, Thursday or Saturday of MEGALI EVDOMADA!!!!

Preheat oven to 160degrees - Each tsourekia batch bakes approximately 20minutes each.


1.
4 x 25g Yeast Wet
1 Cup Flour
1 Cup Warm Water
1 Teaspoon Sugar

Mix this and set aside

2.
10 x Eggs
500g Margerine
3 1/2 Cups Sugar
1 1/2 Oranges (Juiced & Peel Scraped)
3 Cups Warm Milk
2 Tablespoons Maxlepi
1/2 Tablespoon Mastixa Powder
2 1/2kg Flour
1/2 Teaspoon Baking Powder

Method
Beat Margerine and Sugar well then add 1 Egg at a time.
Pour Milk Slowly whilst beating then add the Orange Juice & Peel.
(Don't be alarmed at what the mix looks like - it's supposed to look like a sour blend)
Add the first mixture that you set aside to this and the dry ingredients (Maxlepi/Mastixa)

Fold in the flour LAST.

Leave to Rise about 40min in a warm place

Cut into Pieces and form your tsourekia

Brush the tsourekia with Egg Yolk (add a teaspoon of water to the eggyolk)
Pre-Grill Almond Flakes till brown and aromatic & then sprinkle on the Tsourekia after brushing with Egg Yolk

I usually make a dozen tsourekia and end up handing them all out to ppl like GreekMan.... wink still waiting for the PM :)

UPDATE....the tsoureki recipe turned out GREAT!!!! The batch made 8 medium to large size tsourekia and I managed to give 6 away! Two are left and rapidly shrinking in size :)

The koulouria are delisch too with the morning kafe!
